Corn Salsa (serves 4)  

 

INGREDIENTS

2 Cups Frozen Corn

1/2 cup canned black beans drained

1/2 cup diced tomatoes

1/2 cup bell peppers (use red, green, and orange peppers to add color.)

1/2 cup fresh chopped pineapple. (optional)

1 cup Hook to Cook Tropic Sauce

Chili peppers or jalapeño peppers can also be added

salt, pepper, and cyan pepper for seasonings.

METHOD

In a large skillet melt butter on  medium heat add pineapple and sauté until golden brown.  

Add in corn, black beans, tomatoes, and peppers. Continue to cook until well heated.

Salt and pepper to taste

Stir in Hook to Cook Tropic sauce and allow to simmer, stirring occasionally, until mix becomes slightly thicker.

Add cyan pepper sparingly to make salsa spicy hot.
